A kitchen in full view
The room was part of the menu.
From the table, every work station was visible. The menu moved from green celery and a fino wine cocktail through cured squid, Galician crab, lobster, vegetables ravioli, ray fish and lamb, ending with peach, cocoa and orange flower.
The evening was shared with Kjell, Wouter and Pepijn. A visit to the kitchen afterwards turned the setting into its own final course: four friends standing at the pass, looking at the room from the other side.
Some kitchens are a backdrop. This one was part of the conversation.
