Aponiente

The last table of a weekend through Seville: a journey into the sea, staged with an imagination all of its own.

The journey

One final landing before Mallorca.

We had spent the weekend travelling through Seville with Juvimar’s butcher. Aponiente was the final stop before our flight back to Mallorca — a destination in itself, and the kind of table that gives an entire trip its ending.

From the entrance, the restaurant already felt like its own world. The “Master of the Seas” appeared on the wall, a playful reminder that the sea would set the rules here.

Aponiente did not simply serve fish. It built an entire language around the sea.

The menu was full of technique and surprise, but it never felt like technique for its own sake. A small cracker with miniature gambas was the only course still on the menu after our visit; soon afterwards, the rest of the card was completely renewed.

At the table

Three ways the sea stayed with us.

Cracker with miniature gambas

The tiny gambas cracker

A delicate, lacy cracker dotted with miniature gambas and bright green touches — the one course that survived when the menu changed shortly afterwards.

Tuna ham carved at the table

Tuna ham, carved at the table

A spectacular ham of tuna was sliced in front of us and served in its purest form, with a small sheet of chocolate. Simple on paper, unforgettable at the table.

Personal highlight

Most innovative.

Technique, unfamiliar flavours and a complete world. Aponiente made the sea feel much larger than an ingredient list — and the journey there part of the memory.
