The complete experience

A cloud-covered entrance, transparent tables and an evening that moved with effortless precision.

The team knew exactly when to appear and when to disappear. A foie gras preparation, cured in anchovy salt at the table, came back at precisely the right moment — and a quiet gesture led to three more perfect flans.

A dish at De LindehofMost personal

One of the final dinners

A second visit to Soenil Bahadoer’s table, shared over a six-course Signature Menu, wine and a drink afterwards.

The meal became even more meaningful when De Lindehof closed shortly afterwards. The signed book, receipt and table details are exactly why this kind of archive matters.

Jordi with chef Mauro UliassiA journey within a journey

A table in a former home

A lunch worth leaving Rome for: a train with Federico to Senigallia, a long table at Uliassi, and the same train back that evening.

Jordi was on holiday in Rome with his girlfriend, their six-month-old daughter, Jone and Federico. He and Federico made the detour for lunch in the city where Jordi had once studied. A snail salad looked like a living garden, while a deceptively simple pasta with tomato and basil stayed just as clearly in the memory.

A playful red presentation at DisfrutarBiggest wow effect

When a sandwich becomes a soup

At Disfrutar, a small sandwich did not stay a sandwich for long.

It arrived with a cognac glass holding a fine spray of vinegar. When the bread met the mouth, the aroma changed the entire experience: the small bite suddenly became gazpacho. And two perfect peppers on a dark plate were not peppers at all, but bonbons. It was the kind of playful, precise surprise that made Disfrutar Jordi’s biggest wow effect.

Even the designated-driver pairing was an experience of its own: distilled wine with most of the alcohol removed, served at a different temperature while keeping the flavour recognisably close to the original.

The kitchen at De RozarioA familiar face

The table beside the kitchen

A seat beside Jermain’s kitchen, where every movement of the brigade became part of the dinner.

The evening brought another unexpected connection: the sommelier turned out to be an old acquaintance Jordi had once worked with at De Zwaan in Geldrop. It turned an already memorable dinner with Rob Stad into a small reunion.

Jordi and friends at DiverXOThe unexpected

Nothing behaved as expected

An early day trip to Madrid, a small beer while searching for the restaurant, and then a twenty-five-course journey that took over completely.

Ants, pig heads, mouths, hands and food asked you to forget the usual rules of a dining room. The drinks moved far beyond wine too: ouzo, raki and wine carried the table through the afternoon. The sea urchin served on a hand stayed in the memory — as did duck tongues on a skewer that somehow tasted like a Burger King Whopper. By the time the group stepped outside, they were happily, rather noticeably drunk.

Green dish at AponienteThe final table of a trip

A final landing by the sea

A weekend tour through Seville with Juvimar’s butcher, ending at one of the most original tables Jordi has experienced.

Aponiente closed the journey before the flight back to Mallorca: a restaurant where the sea, technique and imagination seemed to create an entirely new language on the plate.

Jordi and friends with the kitchen chef at LasarteThe first three-star table

Where the curiosity began

A last-minute invitation in Barcelona: Jordi joined Wouter and chef Jeroen for his very first experience at this level.

The room made an immediate impression: sharp, calm and beautifully put together. After lunch they were invited into the kitchen — and the photograph with the kitchen chef turned the first three-star meal into a lasting memory.
