The first Valencia chapter.
The Juvimar group makes a trip together every two years. Valencia was the first one for Jordi — and, until now, the only visit to the city. Riff became the table that holds that trip in the archive.
On 8 November 2018, the restaurant’s playful illustrated menu carried the atmosphere of the evening: a little theatrical, a little surreal and utterly unlike an ordinary dinner. The menu paired its courses with a compact five-glass selection, letting each plate become part of a longer journey.
Autumn mushrooms with aromatic herb moss and foie gras, a golden egg with truffled snow and roasted poularde, fermented squid rice with scallop and Oloroso, corvina with hibiscus and razors, Iberian pork with kumquat and cauliflower, then matcha, coconut, yuzu and pumpkin with passion fruit, hazelnut and coffee: the menu remains the clearest souvenir.
